Homemade Delicious Tomato Soup

With the cold weather starting to set in we are all going to want to reach for the warm comfort foods. Why not try making a delicious tomato soup? It’s simple to make, tasty, warm, comforting and still healthy.

 

Ingredients:
Over Ripe Tomatoes
Vegetable Stock Cube
Table Spoon of Tomato Puree
Pinch of Brown Sugar
Pinch of Salt
Pinch of Pepper
Table Spoon of Cooked Rice

How make it:

 

Barley cover the tomatoes with water and bring to the boil. Add vegetable stock cube and allow to boil for 10 minutes. Pass through a wire sieve.

Then bring back to the boil and add a tablespoon of tomato puree, a pinch of brown sugar and salt and pepper to taste. Now add a tablespoon of cooked rice, boil for 15 minutes & blend. Finish it with a little chopped fresh basil.

Serve the soup in a bowl and top it with a spoon of low fat crème fraiche.
